Default Beans Beans Beans!!

Alright, I know there is a section for recipes, but I am putting this here since several of my dear friends asked for this recipe after the HCR event. And I feel like putting it here.

If you have any questions, ask em, if I feel like it, I will answer them. If not, guess. . .


Elmer and Ora's Southern Limas

(with names like that you know it's a good southern recipe!!!)

Ingredients:

1 lb Dried Lima Beans
2tsp salt
hambone, ham hock, or bacon


1 green pepper, chop & soft cook
1 onion, same as pepper
1 tsp salt
1 can tomato soup
2 TBS vinegar
1 tsp prepared mustard
1 tsp chili powder
1 tsp worchestershire sauce
1/4 c sugar
2 or 3 tsp red pepper flakes

soak lima beans overnight according to package directions.

Combine beans with salt and ham hock and cook slowly for 35 minutes until tender. Begin sauce: combine the pepper through pepper flakes and cook for 30 minutes. Drain beans and combine with the barbecue sauce. Bake for 3 hours at 300 degrees.

Cook notes from my family:

I made a triple recipe for the BBQ, and you saw that was a lot of beans. Tasty, tasty beans. Anywhooo, according to my Grandmom, for 3 recipes, use 2 ham hocks or 1 lb of bacon;
save the water the beans were soaked/cooked in incase the beans are too dry when prepared;
also, the amount of pepper flakes used is determined by how spicy you like things. I used the amount for 1 recipe of beans because I goofed, but I don't think tripling the amount of pepper flakes is a great idea unless you like a burning feeling in your mouth.

about the bacon, I have always used ham hocks, so I don't know how the bacon works (ie do you leave it in when you make the beans) so if you want to make it that way, I will have to call my grandmom for some clarification on that. I just added the salt and ham hocks to the beans and added enough water to cover the beans when I cooked them ---I am guessing this is right because the beans taste just like my Grandparents.

I also forgot to mention we buy the Large Dried Lima Beans cause we like em big in my family. Don't take that statement anywhere other then where it was intended to go, thank you very much

Thanks for sharing that recipe Molly. Some people do not like to share family recipes, but we appreciate it. the beans at HCR were great.

Thanks Beth for the recipe! I really liked them there beans. I will have to make some for my mom. I know she would like them. :grin:

And there wasn't a fart in them!! Not sure how this combo takes the farts out??

I guess you could cook a big pot of wide blade butter beans and put some BBQ sauce and bell pepper in them and be pretty close. They were quite good.

Thanks for the recipe!!

I think BBQ Beans on light bread would have been good had we needed that. Bagger ususally makes sure no one goes hungry though.
