doc is grand champion in chili cookoff
braggin rights ...i got the gran champion in my hog groups annual chili cookoff last night yeah baby!
one small chuck roast cubed small
1 lb lean hamburger meat
1 pack of pork stew meat
6 dried ancho chilis (get these in the mexican section at walmart)
3 dried cascabel chilis
3 dried green chilis (these were actually red)
2 cans diced tomatoes
1 8 oz can tomatoe sauce
oregano 3-4 tblsp
cumin 4 tblsp
one onion diced and 1 tbl sp dried
garlic 2 tblsp dried
salt
paprika
a little chili powder (2 tblsp)
pinch of dried anise
one a\half cup sugar
3 tblsp masa (corn flour, not corn meal)
brown meat add all dried spice except the masa
clean the stems and seeds out of the dried chilis
heat up a couple of quarts of water to boiling and turn off throw in the chilis let this steep like tea
pour most of the water from chilis into meat pot
puree the chili skins that are left with one of those hand held blenders or in a food a food processor.it will look like a wicked tomato sauce lol
add to meat pot.
simmer everything for a couple of hours then mix the masa with warm water and add that to the chili to "tighten" it up
the anise is that licorice tasting spice and people could't quite place it...but they liked it mucho in the chili.
this was medium hot stuff by Louisiana standards
